You should have already set up a race schedule or chosen "train to maintain" when you first signed up to Athletica. You can change this at any time under Settings/Training/Races or "Train to Maintain"
Athletica currently only allows a single A priority race, though we are working on expanding this feature to allow multiple A races. Your A priority race has to be the same sport as your training plan, so if you're on a triathlon plan, your A race must be a triathlon. B and C races can be any sport.
For now, if you have multiple A races, you can either make your last one the A race in Athletica and earlier ones B races, or make your earlier A race the one in the system and then do a recovery week and form a new plan for the subsequent A race.
