You should have already set up a race schedule or chosen "train to maintain" when you first signed up to Athletica. You can change this at any time under Settings/Training/Races or "Train to Maintain"
Athletica currently only allows a single A priority race, though we are working on expanding this feature to allow multiple A races.
For now, if you have multiple A races, you can either make your last one the A race in Athletica and earlier ones B races, or make your earlier A race the one in the system and then do a recovery week and form a new plan for the subsequent A race.
